SWEET POTATO BAKE




















        130 g sweet potato
                                                                                                  1 tbsp honey
              1 tbsp garlic
                                                                                                  1.5 tbsp olive oil
           ½ tsp rosemary
                                                                                                  1 pinch of
                                                                                                  cinnamon powder
           1 tsp chilli flakes
                                                                                                  2 tbsp sour cream
                 1 tsp salt
                                                                                                  1 tbsp chopped
             ¼ tsp pepper
                                                                                                  spring onions

                       SERVES:  2  > PREP TIME: 10 minutes + 1 hour marinating time  > COOKING TIME:  25 minutes

                                                  1. Preheat the oven to 180˚ C.
                                     2. Wash the sweet potatoes thoroughly, peel and cube them,
                                           and blanch f or a few minutes in boiling water.
                               3. Marinate the blanched sweet potato with the garlic, rosemary, chilli flakes,
                                      salt, pepper, honey, oil and cinnamon powder for one hour.
                             4. Bake for about 25 minutes until the sweet potato is cooked and slightly crisp.
                               5. Remove and serve hot, garnished with the sour cream and spring onion.

                         TIP:  ALLOW THE SWEET POTATO TO CHAR ENOUGH IN THE OVEN TO GET A CRISP FINISH.
